Valpolicella D.O.C. Classico

Vineyards sited in three of the five districts of the Valpolicella Classico region, more precisely San Pietro in Cariano, Negrar and Marano di Valpolicella. The plant breeding system is the “double pergoletta” (pairle).
Corvina 70% - Rondinella 20% - Other types 10%. Manual harvest in the middle of October.
Gentle crushing, followed by a maceration on the skins and fermentation in stainless steel tanks.
In 100 Hl stainless steel tanks and in 200 Hl cement tanks for 12 months, followed by aging in the bottle.
First and second courses, as well as cheeses and various kinds of cold cuts.
